Monday Motivation #2: Fig and Goat’s Cheese Pizza (Gluten-free)

 

Welcome to the 2nd installment of Monday Motivation! Did you have a good weekend? Friday was a public holiday so we had a lovely loooong weekend at home. Relaxing, nothing too exciting, but just what the doctor ordered. 🙂

DATE NIGHT

This week we blasted the music, donned our aprons, and made pizza. And then we got a little competitive and pulled out the Kinect games. I forgot how much fun (and exhausting!) these were.

I finally got a wrist band (R49 at Mr. Price Sport) to put my gate remote and key in when I run, and an arm band (R169 at Sportsman’s Warehouse) to put my cellphone in. No more holding them in my hands, yay! And… I couldn’t resist these funky socks!

HEALTHY LUNCHES

I was getting bored with the same thing for lunch so I experimented a little. Used some leftovers, a huge batch of lentils I made earlier in the week with tomatoes and red onions, and other foods that weren’t really getting eaten (like carrots and eggs). 

Fitness Updates and Tips

WORKOUT DVDS: I was so sore after doing a few of these 10-minute workouts on Wednesday morning. They look so innocent, but they do the job, believe you me!

RUNNING PROGRESS: I’m so happy I’m finally making progress! On Monday and Thursday I surpassed 4 kms, and on Saturday I took part in the Parkrun (a 5 km fun run held all over the world). I finished 249th out of 346 people in 44 minutes. Not too impressed with that result, but I walked for most of it and it was my first time, so looking forward to seeing how I’ll fair in the weeks to come.

YOGA: I went to an open yoga class at Virgin Active this Sunday… a TWO hour yoga class. It was tough – I did twists and turns I didn’t even know my body could do, but it was incredible. There was even a 10-minute guided meditation at the end. Now I see why so many people swear by this exercise; you feel like a brand new person at the end.

The Power of ‘YES!’ and ‘NO’ 

Do you do things because you think people expect that of you, even when you don’t want to do them?

Do you say ‘no’ to things because you’re scared of getting out of your comfort zone?

You’d be surprised by how less stressed you feel when you say ‘no’ to things that don’t make you happy, and ‘yes’ to things that force you to experience something different and fun! I’m trying to work on saying ‘yes’ to more things this year.

And now for that pizza…

 

Recipe of the Week

Gluten-Free Fig and Goat’s Cheese Pizza

This is the pizza I made on date night. It came out BEAUTIFULLY… so yummy that I had to share it here. It’s vegetarian and gluten-free, and delicious! Probably one of the top five pizzas I’ve ever eaten, no jokes. The sweetness of the figs and balsamic glaze are balanced perfectly with the salty goat’s cheese and peppery rocket. And the base was crispy and soft in all the right places.

I didn’t measure everything, so when you get to the base, just use enough water so that the dough isn’t too sticky or too dry.

SERVES: TWO

Ingredients

GLUTEN-FREE BASE

  • 1 cup gluten-free self raising flour
  • 1 egg
  • 50 ml olive oil 
  • warm water
  • pinch of salt

TOPPINGS

  • 4 – 6 ripe fresh figs
  • goat’s cheese
  • rocket leaves
  • balsamic glaze
  • 20 ml olive oil
  • 5 ml garlic
  • pepper

Method

  1. Preheat the oven to 180 C. Spray a baking tray with nonstick spray and set aside.
  2. In a large bowl, mix all the base ingredients together. 
  3. Spread the dough onto the baking tray directly using your fingers (no yeast, so no need to wait for the dough to rise, yay!) Use a fork to prick a few holes and put the base into the oven for 10 minutes.
  4. While that’s going, cut the figs into medium slices, cut the goat’s cheese, and wash the rocket leaves.
  5. Brush the pizza base with the rest of the olive oil and garlic. Add the figs and goat’s cheese on top and bake for another 10 – 15 minutes.
  6. Once the pizza is finished baking, add the rocket on top, drizzle with balsamic glaze, sprinkle with pepper, cut, and SERVE!

      Thanks Michelle! As far as I know a lot of pizzas with fig are made with another type of cheese like brie or Camembert as well. But this worked beautifully 🙂

  4. No stress in this boy and no goat’s cheese either. LOL I had to stop and think but I don’t believe I’ve ever had goat’s cheese. Maybe I’ll give it a try just because my friend Mel suggested it. Have a great week Mel.

      I don’t eat figs often, I think I’ve probably only had them two or three times. But after seeing them on MasterChef I suddenly got a craving and now I’m craving more of that pizza, lol. Have a fab Monday too 🙂
