Monday Motivation #1: Coconut and Pineapple Smoothie

Welcome to the first GHB ‘Monday Motivation’ mini newsletter!

I hope you had a brilliant weekend!

Okay, so quick introduction on what you can expect from these new Monday posts…

  • A brand new healthy (or occasional not-so-healthy) recipe
  • Some motivation or feel-good stuff (coz who doesn’t need that for the week ahead?)
  • A fitness tip of the week and my running / workout progress
  • A quick lowdown of my week in pics
  • And, a couple of fun or interesting links thrown in for good measure

Righto, let’s get to it!

This Week in Pics…

We haven’t had a date night in forever. We used to be so good about it and then I don’t know what happened. Life, work, blah, blah, blah… I’m sure you know the story.

Date nights in the middle of the week are awesome. It just breaks the week up and gives us something to look forward to. Especially weeks after pay day when you’re forced to get creative. On Thursday we made sushi at home – not as easy as it looks, but a lot of fun!

We were clearly on a roll with our new weekly date night promise because on Saturday we had a mini brunch date as well. I ordered this red cappuccino… absolute heaven in a cup. Have you had one of these before?

Last week was Geoff’s turn to cook. We take turns every alternate week, which works perfectly for us. Plus, we have a great rule in our house: the one who cooks does the dishes too! Yup, don’t go trying to use every pot and pan in the house now, because guess who cleans up afterwards? Lesson learnt!

He made roast butternut stuffed with feta and spinach on Monday. Holy moly, it was so good!

For lunch, I added in some sliced peppers to my go-to chickpea salad – I love how colourful it is! (We bought a 1 kg bag over the weekend… R35 for about 6 – 8 huge peppers at Woolworths. Such a bargain!) Peppers are great for soups, roasting, salads, stuffing – you name it.

I started reading this new book by James Patterson. It’s about animals rising up and taking over the world (YEAH!) and I’m ¾ way through already. It’s one of those insanely addictive books that you just can’t put down.

I drank a lot of herbal teas this week too. There are so many amazing flavours out there, have you noticed? My three favourites atm: Vanilla and Cinnamon, Rooibos Chai, and Peppermint.

On Saturday we stopped at Mr. Price Sport to have a browse at their running and cycling gear and to get a thin jacket for winter workouts. Is it just me or has it suddenly become a bit nippy in the mornings?

I took this selfie in the change room. Lame, vain… say what you will… Truth be told, I’m actually one of the shyest, most introverted and self conscious people you will ever meet. But, I decided earlier this year that I’m done missing out on fun things (on life really) because of my anxiety and shyness. So here’s me –  going way out of my comfort zone. And wearing a dress – I never wear dresses.

This is the top I walked away with. I can’t wait to wear it; it’s got pockets and little holes to stick your thumbs through at the bottom of each sleeve, sort of like mini gloves!

Winter is definitely just around the corner! Our two little munchkins were either stealing my chair every time I went downstairs or jumping for joy (warmth) onto my lap every time I sat down. I can’t complain though, they’re so cute… I mean, just look at them! (They really do get away with murder in our house…)

Fitness Update and Tips

(That’s Jinx having a snooze at my feet while I was stretching after my morning run). I’m feeling good about my progress this week. I got in two morning runs (more walking than running right now); my furthest distance is 3.6 km in 31 minutes. Still got a way to go before next month’s 5 km race though…

On Friday I finished this Jillian Michaels workout DVD. Just. Holy hell, this workout was INSANE and I’m not even joking. I’ve never felt so close to tears – tears of relief that it was over! – after exercising. Never. I’m pretty sure I swore at her through the TV a couple of times too. The next day I was sore in all the right places though, so I’m feeling better about all those promises on the cover.

I know I go on and on about Jillian Michaels a lot, but I promise you, this lady knows her stuff. So if you’re not sure about buying one of her DVDs or want to see what all the fuss is about, check out this 6-minute beginner workout. It’s from her ‘Banish Fat, Boost Metabolism’ DVD and it’s awesome! Don’t panic, I promise this is an easy, fun workout that anyone can do, so don’t be shy – give it a try and see for yourself!

Moment of Bliss…

We’re already almost a third of the way into the year (where has the time gone?!), and I don’t know about you, but I could seriously do with a holiday right about now.

Unfortunately, that’s not going to happen anytime soon so I thought of the next best thing: A random leave day from work during the week. Have you ever tried it? I love those one day mini holidays. Which reminds me, I need to plan one again, soon.

Recipe of the Week

pineapple smoothie

Seen as we’ll be waving bye bye to summer shortly, I thought I’d whip up a fruity smoothie this weekend. I was inspired by a coconut smoothie recipe I came across, but it had too many expensive ingredients and sounded a bit bland, so I switched it up a little and added in some pineapple.

I don’t own a smoothie maker, blender or a food processor so I just use a hand blender and a jug whenever I make smoothies. Works like a charm.

I was actually pleasantly surprised by the taste. Not something I’m used to, but definitely something I’d make again and worth trying if you’re in the mood for a creamy tropical delight!

½ tin of coconut milk

4 T low-fat plain yoghurt

¼ fresh pineapple

10 ml almond essence

squeeze of lime juice

2 – 3 ice blocks

Blend all the ingredients together, serve in a tall glass and enjoy!

More Good Stuff…

That’s it for this week’s Monday Motivation post. Did you enjoy it? Was it too long? Would love to hear your feedback.

Have a stunning week!

Thank you Bill, and thank you for so subtly pointing out that spelling mistake, lol! All fixed now. 😉 I’m so glad you’re up for trying a smoothie recipe. 6. Such a great post, and a lovely smoothie to boot! I cook every night with help from Dave most nights. When we go on holiday he cooks and I do the dishes – it is a lovely treat for me to not cook one meal for 13 days 🙂
