Spring has at last arrived in this part of the world and I can’t wait to finally have some time to make a few recipes using all those delicious fresh fruits and veggies that are almost in season. Litchis, mangoes, papaya, strawberries… yummy!

I’m going to try and recap a few favourite recipes each month, and since we’re celebrating all things fresh, I thought it would be the perfect time to list some easy ones using fresh fruits and veggies.

2 Minute Mini “Apple Pie” Microwave Recipe – This is so delicious! I make this 3 minutes before walking out the door for work – it’s a great mid-morning snack.

Easy Creamy Banana Pudding – Another idea for a morning or afternoon snack, or you can even eat it as a dessert. I use peanut butter and cocoa powder to make it like this.

Vanilla Flapjacks with a Spicy Plum Sauce – I was bored one afternoon and the only fruit we had in the house was a bowl of plums….

Rice Cakes with Curried Lentils and Tomato Salsa – Who said rice cakes were boring? This makes a nice light lunch if you don’t want to feel sluggish after eating a sandwich, etc.

Cheesy Homemade Nachos – I find the ones at restaurants so greasy. This is a simple recipe where you can really change it up to whatever you have in the cupboards at home!

Possible Recipe eBook…

In case you’ve been wondering why I’m not posting as many recipes on Good Health Buzz these days (besides not having as much time to have fun in the kitchen), it’s because I’m working on a recipe book.

It’s something I’ve been working on – on and off – for the last 6 months. I’m not planning on getting it professionally published – obviously… but, I thought it would be fun to put some of my favourites together in the form of an eBook. So far, I’ve got about 50 recipes that all need to be remade again from scratch, and I’ve got to get most of them photographed which is no small task and totally weather dependent (as I rely on the sun most of the time!) So far, I’ve had some feedback about it, but I need more.

So please, if you have a sec, leave me a comment or pop me a mail and let me know if you’d be keen on reading / having / buying a recipe book with recipes like this.

Maybe it would help to tell you a bit more about what I’m envisioning? Here’s the plan...

  • I was hoping to get it out before Christmas, but that’s not going to work unless I rush it, and I really don’t want to do that. I’m expecting it finished early 2014.
  • It’s going to have healthy recipes in it.
  • They’ll be gluten-free.
  • Most of them will be vegetarian, though there will be some chicken/fish ones as well.
  • It’s going to be budget-friendly. No silly ingredients that cost the earth like “saffron,” etc.

That about sums it up. I’m actually really excited about it, it’s going to be a fun project. I just really need to start making the time to focus on it!

  2. Oh I can’t wait for the book! That sounds awesome Melanie…and I’ve been trying so hard to reduce the amount of meat my family is eating. I realized while shopping, I always center the meal around the meat. Why do I do that?! Habit? I suppose I was raised around meat and potato kind of people:). I’m trying to reach out of my normal list and incorporate more pasta and vegetables.

      Thanks Kelly!! 🙂 I know what you mean, we also grew up on meat and potatoes and lots of pasta. Can’t live without those potatoes though, lol!
