My Week of Baking Obsession and Cheating with Sweet Treats

I blame Halloween.

That’s when it all started. I swear, if it wasn’t for that day, I would never have cheated, indulged, obsessed over all these bloody deliciously evil sweet treats.

Evil, evil, evil.

It was bound to happen sooner or later though. For just over a month, my idea of desserts has been nothing more than a little plain yoghurt and a few strawberries. That’s it.

No wonder the sweet craving took over, heck, it didn’t just take over – it hooked me in and forced me into this whole baking euphoria. I won’t lie though… the last week or two, I’ve been in baking heaven. Oh my word… how I’ve missed BAKING!

For our “Halloween” aka “scary movie night”, I made salted caramel popcorn and this sweet pumpkin pie

Sweet pumpkin pie with fresh cream

It was the first time I’d ever attempted making a gluten-free crust, and OMG… it turned out perfectly, well – almost.

This year was only the 2nd time I’d attempted making this pie. I honestly don’t know what rock I’ve been living under all these years that I didn’t know this dessert existed. It’s criminal I tell you. Who ever would have thought that veggies would make a good sweet dessert?! Crazy. But it’s AMAZING. You’ve got to try it.

Oh, yes… I know – I screwed up the crust a little – it got a little sunburnt in the oven, but it’s all good – I quickly learnt how to fix that little problem with the cheesecake. You’ll see in a bit…

Lemon glaze tart with pistachios and almond cream cheese frosting

Every Friday where I work (until the end of December) one of us brings some form of treats to the office. Cupcakes, cakes, cookies, pies – whatever. It’s a really cool tradition.

Last week was my turn and I thought it was time to bring something gluten-free so that I could finally have something at tea time too. I normally make an orange glaze tart, but switched the oranges for lemons and the almonds for pistachios. The result was even better! I don’t think I’ll make the orange one again, actually. Nothing like zesty lemon, salty nuts and creamy frosting. Heaven. On. Earth.

Vanilla cheesecake with pistachios and salted chocolate ganache

On Saturday we visited my parents as my dad had just had an eye operation and we wanted to see how he was doing. What did this mean for me. ANOTHER excuse to turn that oven on and get baking! I swear, it’s as if something just took over me.

I got the crust down (finally!) and filled it with vanilla cheesecake, topped with chocolate ganache and left over pistachio nuts from the day before. Then just for overkill, I sprinkled a little salt on top! Might as well go all out if you’re making a dessert, right?

Okay, so it’s not super healthy BUTΒ life is too damn short not to have dessert. You’ve just gotta do it in moderation. Well I do anyway. My body’s not very happy with me today, but it should be back to normal again in a couple of days.

It was totally worth it though.

Now that you know mine, tell me… what are some of your favourite sweet treats?

Which dessert is your favourite, or that you'd like to see the recipe of?

I hope that these sweet treats didn’t wreak too much havoc on you, but man oh man, the pain of the after-effects might have been outweighed by those moments of sweet heaven…ha!
